Sweet Potato 1 large |
Garlic 2 cloves |
Olive Oil 1 tsp |
Seasoning pinch of salt, 2 twists of black pepper, 1/4 tsp of oregano, 1/4 tsp basil, 1/4 tsp rosemary, 1/4 tsp thyme |
Method |
Preheat the oven to 220 degrees |
As the oven preheats, peel (optional) the sweet potato and then cut it into wedges. I like to cut it in half lengthways. From here cut the two pieces in half and quarter each half lengthways. |
Add the sweet potato to a mixing bowl along with all of the herbs and seasoning, the crushed garlic cloves, and the olive oil. Mix well before transferring the sweet potato to a roasting tray. |
Cook for 35 minutes |
Sweet potatoes are packed with an abundance of nutrients. Sweet potatoes are high in antioxidants, such as vitamin C and beta carotene. A serving provides a huge 65% of your vitamin C daily value.
