  1. Coarsely grate the carrots and finely shred the cabbage and transfer into a large bowl.
  2. Season with salt, then vinegar, and mix everything together then let it stand in the fridge for 15 minutes.
  3. Add in the grated apple then stir in the mustard, vegan mayonnaise, and vegan yogurt and mix until everything is well combined.
  4. Season to taste with salt and pepper and serve immediately.
